Pumpkin Seed Powerballs
This recipe is one of many varieties I make to keep on hand all the time. Power balls are one of those things that have become so popular the past few years and I’m thrilled about it! When made with the right ingredients they are delicious, energy filled, nutritious little poppers of energy. Nut or seed butter make up the base and then get mixed with oats, more nuts or seeds, vanilla, maybe some dried fruit or maybe chocolate chips (!!), a little bit of sweetener and voila.
Portable, delicious little nuggets of energy! So while you’re perhaps focusing on eating “cleaner” or “detoxing” this month, don’t forget that your body actually knows how to detox itself. It is literally built to do it. So start making meals and snacks with real ingredients, rather than relying on store bought or packaged snacks and meals. That’s the real way to feeling better and starting the year off right! And these power balls are great when you’re busy and might otherwise grab a granola bar or something else super processed.

Pumpkin Seed Powerballs

Prep Time: 25 minutes
Makes: 20-24 Power Balls
- 1 c. oats (I’m loving Zego oats these days. They’re tested for glyphosate, pesticides, are purity protocol certified against gluten and are just awesome. Check out zegofoods.com!)
- 1/2 c. toasted pumpkin seeds or favorite nuts
- 3/4 c. seed or nut butter of choices
- 1/2 tsp. cinnamon
- 1/3 c. maple syrup or honey
- 1/2 c. mini chocolate chips
- Optional: 3-4 scoops collagen powder
- Optional: 1 tsp. vanilla extract
Directions
- Add the oats and your nuts/seeds to the bowl of a food processor. Pulse until they are finely chopped.
- Add all remaining ingredients and run the food processor until it’s combined, about 1 minute. Scrape down and pulse until it’s all combined again, adding more seed or nut butter and a little more maple syrup or honey as needed. They should easily roll together and not fall apart but also not be sticky.
- Scoop out into 2 Tbs. size balls, roll between your palms and place on a lined baking sheet. Pop in the fridge until set, about 30 minutes and then store in a resealable container for about a week.
